If you’ve ever been to my place around breakfast time, chances are you know and love my sweet potato hash. My college friends used to wake me up with requests of making this after a night out. I love this dish because it’s easy to make in bulk, stores well, and is an incredible side for breakfast, lunch, or dinner under a sunny-side up egg or with some greens.

 

INGREDIENTS:

1 large sweet potato, chopped

1 medium yellow onion, chopped

3 Tbsp. avocado oil

2 tsp. spice blend of your choosing (my favorite is cumin, coriander, black pepper, nutmeg, cinnamon, cayenne, paprika, and sumac)

Salt to taste

 

STEPS:

Warm a large fry pan over medium heat, grease with avocado oil. Toss in onions and spice mix, stir to combine. After about 2 minutes, throw in the sweet potatoes. Keep the heat medium/medium-high while continuously stirring to allow the potatoes and onions to slightly fry without sticking. Once the potatoes are easily penetrated with a fork it’s time to plate!
