Classic Hummus

INGREDIENTS:

2 cups dried chickpeas (soak in water overnight)

1-2 clove garlic

2 Tbsp. tahini

1 1/2 Tbsp. lemon juice

salt to taste

STEPS:

Drain chickpeas from the liquid they soaked overnight in. Transfer to a pot and add enough water to cover chickpeas by a few inches, cover, and bring to a boil. Reduce heat and simmer until chickpeas can be easily mushed with the back of a spoon (~1 1/2-2 hrs). Strain chickpeas well to get rid of excess liquid.

Transfer chickpeas to a food processor or high speed blender. Add remaining ingredients and blend until smooth. Add salt to taste. Keeps well in a sealed container in the refrigerator for up to 2 weeks.
